Fruits and vegetables are the essentials for a healthy life. This is an opportunity to try out ingredients that aren’t commonly used in summer salads. Salads contain a significant amount of vitamins and minerals, and having one daily enhances the level of potent antioxidants in your bloodstream. The base of any salad is typically leafy greens, which are packed with essential nutrients.
That’s why Ariana Society wants to provide a recipe which is easy and super healthy for all of us. We chose blueberries, as one of the fruits that is more common to find at the markets.
Today we propose Warm Blueberry Farro Salad, with a variety of flavors and textures for a satisfying dish.
The necessary ingredients for this special smoothie are:
- 1 cup farro, cooked according to package directions
- 1⁄3 cup olive oil
- 1⁄4 cup finely chopped fresh mint
- 2 tablespoons finely chopped fresh parsley
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup fresh blueberries
- 1⁄2 cup finely crumbled feta cheese
- 1 shallot, thinly sliced
Recipe from Blueberries
In a large bowl, whisk together oil, lemon zest, lemon juice, garlic, salt and pepper; add farro to bowl, tossing to coat with vinaigrette. Stir in blueberries, feta, shallot, mint, and parsley.
The basis is warm farro, which is tossed with sweet-tart blueberries, tangy feta, crunchy shallots, and fresh mint and parsley. Serve as a dinner or side dish with a simple lemon vinaigrette. Using what’s in the pantry as a starting point? Replace the shallot with red onion or your favorite whole grain, such as quinoa, rice, or barley.
